HADDOCK

Haddock (Melanogrammus aeglefinus) – such commercial fish as haddock belongs to the cod fish family. Haddock can be found in the northern seas of the Atlantic and Arctic oceans. Haddock is a rather big fish, whose length can reach 50-70 cm, and the weight of average haddock is app. 2-3 kg. Meat of this fish is highly valued – it is white, not fat, has a very delicate flavor. Haddock is rich in protein, vitamin B12 and selenium. In addition, in this fish you will find pyridoxine, sodium, potassium, bromine, iron, zinc, iodine, fluorine, vitamin B complex, and also A and D. As most of other fish, it is rich in essential amino acids, in its fat there is polyunsaturated fatty acid from the class of omega-3.

PRODUCTION STAGES

1. CATCH

Vessels of FCF “Belomorskij Ribak” catch haddock using the bottom trawl. Depending on fishing, fishing vessels produce an average of 4-5 trawls per day. Haddock is fished year-round almost in the entire Barents Sea and adjacent seas.

2. ASSORTING

Immediately after fishing, our haddock instantly falls into production sorting lines, where fish are separated by size. Then the fish goes to the fish processing factory, where further processing takes place.

3. PROCESSING

During processing, the fish undergoes a mechanized cutting of the type H / G (Head off Gutted), during that process the head and entrails of the fish are removed. This cutting ensures the rational use of fish raw materials, helps to preserve the freshness of fish and facilitates further coastal processing.

4. REFRIGERATION AND PACKAGING

At the end of processing, containers with fish products are subjected to contact freezing in special freezers at an air temperature of minus 30-35 C. After that fresh-frozen fish products are packaged in kraft bags weighing 20-25 kg and delivered to the hold for storage.

Similar to the Atlantic cod time between fishing and freezing does not exceed 2 hours, which allows the haddock produced by FCF “Belomorskij Ribak” to preserve its useful properties and quality to the maximum.
